I usually prepare cabbage stir fry with chopped cabbage which are not too fine.I have already in my space a way to prepare palya/sabji from cabbage, i.e. Cabbage Palya. For thoran, as the Keralites prepare requires us to chop the cabbage very fine, or grate them or even make use of a food processor to serve the purpose. I grated the cabbage. As grating is involved, it requires no extra water to cook not it takes much time to get cooked. In cabbage thoran usually shallots are used. Even they are chopped fine as the cabbage. But since I'm no to onions on festival days, I avoided onions/shallots in thoran. I prepared it in a very simple way as below.
Ingredients:
Cabbage-1 cup grated
Green chillies-2 finely chopped
Ginger-1/4 tsp grated
Turmeric powder-1/4 tsp
Fresh/Frozen coconut gratings if available-1 tbsp. (I didn't use though)
Mustard seeds-1 tsp
Udad dal/Skinned split black gram- 1 1/2 tsp
Oil-2 tbsp.
Curry leaves-1 sprig
Salt to taste

Recipe:
- In a bowl add grated cabbage, grated ginger, green chillies, curry leaves, salt to taste. Mix well and keep aside.
- In a pan take oil and place it on flame, when hot add mustard seeds, udad dal and as they crackle add the mixture of cabbage in step 1 to the pan.
- Add turmeric powder and sauté well.
- Cover and cook for 10-12 mins and the cabbage thoran is ready.
Note:
- If you wish you could use shallots, chop them fine and add them along with chopped cabbage in step 1.
- If fresh/frozen coconut gratings are available, do add 1 tbsp. of it to the cabbage mixture in step 1.
