Thuppa Dosa/Ghee Dosa

Our visit to India as told by my partner was for eating south Indian sumptuous meal, dosas and desserts. I agree we did enjoy many delicacies atleast once. Reason behind my thuppa dosa today is solely for my hubby. I have observed many times before coming to Germany as well as during our recent visit to India, he ordering thuppa dosa in south Indian restaurents. This was my motivation behind preparing thuppa dosa in my pantry.
Very simple recipe with proper measurements is as below.


Ingredients:
Raw rice-2 cups(Dosa rice preferred, If not available Sona masoori would do)
Udad dal/Skinned split black gram-1 cup
Maida/All purpose flour-1 cup
Rawa/Semolina-1/2  cup
Beaten rice-handful(Use only if you are not using dosa rice, Beaten rice not required if dosa rice is available)
Water as required to prepare batter
Salt to taste

Recipe:
  1. Wash and soak rice,udad dal separately with enough water.
  2. Wash and soak rawa as well as beaten rice separately.
  3. Mix one cup all purpose flour/maida with around 1/2-3/4 cup water and prepare a lump free thick batter.
  4. After soaking for 4-5 hours, seperately grind the ingredients mentioned in step 1 and step 2 in a mixer to get dosa batter with right semi thick consistency.Now mix the all purpose flour/maida mixture prepared in step 3 to it and add salt to taste and allow it to ferment overnight.Batter looks as below in pic.
  5. Heat a tawa/flat nonstick griddle and pour a ladle full of batter on hot tawa and do not spread it thin.Just slightly spread it and cook for 2-3 minutes covering on high flame.
  6. Now add around 1/4 to half tsp of ghee on top and spread it all over the dosa.
  7. Now flip it for a while say 30 secs and transfer to the serving plate.
  8. Serve hot with desired chutney and sambhar.
  9. We enjoyed the dosa with Mango Ginger/Aamba haldi chutney and South Indian style Coconut Sambhar
