Kashmiri Dum Aloo

Dum aloo is a very famous Kashmiri cuisine. It usually involves frying the peeled pricked normally small potatoes and then cooking them in a very low flame in a blend of spices. But to avoid little more of oil content, I steam cooked the potatoes, peeled and cut them into halves  and then pricked them and using fork all over. Then followed the normal process of cooking in low flame till the potatoes absorb the spices well. It goes well with Indian flat breads or even plain rice. We enjoyed Dum aloo with rumali rotis. Here I share the simple yet tasty recipe of Dum aloo.

Ingredients:
Small potatoes(baby potatoes preferably, even small normal potatoes will do as I did)
Whole garam masala (It includes 1bay leaf, 2 cloves, 1'' cinnamon stick, 1 cardamom)
Cumin seeds-1/2 tsp
Fennel seeds coarse powder-1 tsp
Turmeric powder-1/2 tsp
Red chilly powder-1/2 tsp
Ginger powder-1/4 tsp
Coriander powder-1tsp
Garam masala powder-1/2 tsp
Yogurt/Curd-1 cup
Milk-1/2 cup
Cashews-8-10 powdered
Oil-2 tbsp
Salt to taste
Water 1/2 cup+2 tsp.
Recipe:
Pressure cook potatoes, peel and cut them into halves. Using fork prick throughout the halved potatoes and keep aside. In a pan add oil, when hot add whole garam masala,cumin seeds, as they crackle add fennel seeds coarse powder, ginger powder and sauté.
In a cup mix well red chilly powder,garam masala powder, turmeric powder, 2 tsp of water. Add this to the mixture which is getting cooked above.
In the same cup used above add yogurt or curd and beat well.
Add the beaten yogurt prepared above to the mixture that is getting cooked with continuous stirring for a while and then add milk and 1/2 cup water and cook in a slow flame.
Now add the potatoes into it, salt and mix well. Allow it to cook on a very slow flame till all spices get incorporated well.
Add cashew powder at the final stage and cook another few minutes on a very low flame. Dum aloo is ready to serve with any Indian flat breads like rotis or even with rice. We enjoyed dum aloo with rumali roti.
