Mango Ice Cream

Whatever the season is, love for ice cream is something which never dies. Spring has shown its colors in our city and the onset of spring means, here there would be days which are really warm like summer alternating between some moderate temperature days and some cold days. But 2-3 weeks back we had such an awesome temperature. After season of chilling cold winters, it was a pleasure to luxuriate in the warm Sun outside and bask in a cone of one's favorite flavored ice cream.
I was like they definitely have good amount of loaded sugars and artificial colors or flavors in them, why not try one of our favorite flavors at home and guess what, it is mango ice cream. Yes, you read it right, I added no sugar, no colors! Bingo yet it turned out yum.

Plain Pannacotta with Orange sauce and Strawberry Jam

A most wonderful dessert that I ever had was Pannacotta. Never in my life did I ever have this exotic dessert. No wonder, my sweet tooth will never stop me from trying out desserts from Indian to International. To be upfront, I never ever prepared this dessert nor tasted in my life. As a part of challenge in SFC-Sweet Fantasy Club this month we were given Pannacotta as a fusion dessert and Malpua as Indian sweet. I'm happy to be a part of this group and to get a chance to try these beautiful desserts. I enjoyed the very authentic Indian sweetmeat malpua which I posted yesterday, to talk about Pannacotta, I was worried and became little edgy, hence tried to prepare as less as possible, still I ended up with 3 cups filled half with this fantabulous lip smacking dessert. I'm happy for that now as my kid just gobbled the entire one cup and was asking for more. I was scared to offer her more though. I too enjoyed it alot, so not to complain much about her. Pannacotta is an Italian Dessert believed to have originated in the Northern Italian region of Piedmont, although it is known worldwide. Pannacotta which literally means 'Cooked Cream'. In earlier days this dessert used to prepared by cooking cream along with fish bones which contain collagen that act as gelatin to help set the cream when cooled to room temperature. But nowadays lots of ways are found to make it vegetarian with the use of agar agar, a sea weed(vegetarian Gelatin it can be called). Even vegan Pannacotta can be prepared with the use of soy milk/ almond milk/ coconut milk instead of regular milk and cream. So here I share without any delay the recipe of Vegetarian version of Pannacotta.

Pista Falooda

Falooda is a well known cold, sweet beverage which is usually consumed as drink or as dessert. Its origin longs back to Mughal Empire. It is originally made with rose flavoured milk but depending on choice it has been made with varied flavours like saffron flavoured or mango flavoured or even pista, chocolate and many others. I wished to try pista flavoured falooda as I'm not that fan of rose flavor and we as a family enjoyed it to the core with a dollop of vanilla icecream. Sounds yum? Lets see how I made this pista falooda.

Mango Milkshake

Mango season almost ended, still we manage to get the mangoes here from Asian stores which are imported from Asian countries. I got last week a carton of mangoes in which it was mentioned 'Honey Sweet Mangoes'(they were really very very sweet mangoes) that were exported from India.
Mango being the king of all fruits it is liked by almost all. My kid Shreeya is so choosy and always expects me to prepare mango milkshake atleast one time a day because she got used to mango milkshake once a day during mango season.
But literally I'm worried with the thought that in the days to come, they won't be available for another one year. We get mangoes from Brazil here during offseason too but they could never reach the taste of Indian mangoes. So once I tried to delude my daughter by preparing milk mixed with Pediasure instead of mango milkshake but Alas, she couldn't be betrayed. She was asking me again and again to prepare mango milkshake for her. I'm now in a situation of worried mom thinking as how to make her forget about the mango milkshake soon. Well I'll soon get some good ideas. Authentic Aamras

Aamras is nowadays prepared in many ways by grinding mango chunks with added other ingredients, but the traditional or I could say the authentic way of preparing involves extracting pure juicy mango pulp alone without any fibrous content. Having been in Gujarat for few years I tried to get hold of few recipes that are considered to be a must during particular time of the year, say aamras during mango season, Ghujiyas/Ghughras during Diwali etc.I got sweet mangoes from an Indian store nearby. Thought to prepare aamras out of it.
Here I share with you the old way of extracting pulp from mango.

Pomegranate Juice

Sipping the yummy pomegranate juice is a luxury at any time and any season of the year for our family. Till my marriage never tried juice out of pomegranate. Only it was consumed as fruit. After marriage when we were staying in India my better half introduced me this yummy coolant.
The colour itself is so soothing and not to forget the taste. I could skip any day's meal for this particular juice. Pomegranate rich in vitamins like vitamin C, K and also contains many minerals in it.
Worth the effort behind deseeding and blending to prepare the juice.

Mango Custard

Mango season it was in India during our recent visit. Carried few unripe mangoes all the way to Germany so that we could wait till they ripen and enjoy them as mangoes are our family favourites. My kid enjoys mango in the form of lassi/milkshake where as we like it in any form, and today we tried custard with mangoes alone.
Yummy delicious mango custard is simple to prepare and should enjoy it chilled to get the best taste.

Carrot Cashewnut Milkshake

Before moving to Germany me with my family got a chance to visit one of my close friend's house. Our welcome drink there was this yummy milkshake. I was continuously asked to keep guessing the ingredients of the milkshake. My guessing session went on with my different guesses based on colour and taste of the milkshake like, ingredients may be muskmelon,almond, and many more but finally I was surprised to know that it was carrot cashewnut milkshake. Wow still remember the day, my kid was just 9 months old and she drank that so easily that I wondered why the hell I din't get this idea before! This milkshake recipe was from my friend's husband Mr A. Wow, so yummy it was! You could make any kid eat carrot this way because the smell of carrot never remains in the final product and hence no wonder if I tell a kid will just finish it off and ask for more. I was really surprised to know the ingredients in the milkshake from my friend. Well here I share with you the unique recipe of this yummylicious milkshake.

Our days to visit India is approaching! We are delighted and are very busy with full fledged shopping. Our saturday shopping was real tiresome with our shopping and eating outside.
By late evening my hubby was so tired that he just requested me to prepare spiced butter milk, which we call 'masale majjige' in our language.

Fruit Custard

A refreshing bowl of fruit custard is cooling and comforting at any time of the day.
Here I tell you the recipe of this simple dessert.


Ingredients:
Custard powder-2 1/4 tsp
Milk- 500 ml +2 tbsp
Sugar- 4-5 tbsp
Apple chopped- 1 cup
Mango chopped- 1 cup
Banana chopped- 1/2 cup
Chopped dates,chopped cashews and raisins-1/2 cup

Recipe:
  1. In a deep bottom pan add 500 ml of milk and bring it to boil. Keep stirring to avoid burning at bottom.
  2. In a bowl mix custard powder with 2 tbsp of milk.
  3.  
     
  4. As the milk boils add sugar, mix well and then add the mixture of custard powder and milk prepared in the above step 2 to the boiling milk with continuous stirring.
  5.  
     
  6. The boiling milk begins to thicken and at this stage take it off the stove and let it come to room temperature.
  7. Refrigerate and chill the thick custard milk prepared.
  8. In a bowl take chopped apple, mango, banana, dates,cachews,raisins.
  9. Add the chilled thick custard milk to it and serve.

Orange Juice

Fresh juices are always comforting and refreshing during summers.
They quench your thirst and make you feel fresh.
Here I come with a fresh orange juice.Very simple recipe is here

Ingredients:
Oranges-2
Sugar-2-3 tsp (based on sweetness preferred)
Water-1 cup
Ice cubes -few (optional)

Recipe:
Peel oranges,take seeds if any and drop them to blender
Add rest of the ingredients into it and blend together.
Strain the juice if you don't prefer pulp in your juice.
I din't strain as I wanted them in my juice
Enjoy with ice cubes

Avocado Milkshake

Eating an avocado of is a good way to increase the amount of vitamins and minerals in your diet.Avocados are rich in healthy fats,fiber,a store house of different vitamins,minerals like magnesium and potassium.Best and good food for growing kids.
Here I have a simple avocado milkshake for you.

Ingredients:
Ripe Avocado- 1/2
Milk- 1 1/2 cup
Sugar-1 1/2 tbsp (Depending upon the sweetness required)
Ice cubes (optional)
Chocolate syrup-a tsp (optional)

Recipe:
Cut avocado and after removing the pulp, cut them into chunks and drop into a blender.
Add just little milk around half cup and sugar and blend well till it is smooth.
Now add remaining milk and blend again.
Line your serving glass with chocolate syrup and add the milkshake to it.(I didn't use that syrup too)
Add ice cubes and serve chill. (I din't add as I had to give that to my kid)

Kesar Badam Kulfi

With the onset of summer here I have a kulfi recipe for all.A popular frozen dairy dessert from the Indian Subcontinent. It is often described as "traditional Indian Subcontinent ice cream".
Traditionally it was made by evaporating sweetened flavoured milk cookin slowly and stirring continuously. But now many versions are available.I have one version for you all
Simple yet delicious kulfi recipe is here.

Ingredients:
Almond powder-2 tbsp
Powdered Sugar-1 cup
Milk powder-1 cup
Whole Milk- 1 cup
Corn flour-1/2 tsp
Water to dissolve corn flour- 2 tsp
Chopped almonds,cashews-2 tbsp
Saffron/Kesar- few strands crushed
Cardamom powder-1/4 tsp

Recipe:
Bring milk to boil in a deep bottom pan with continuous stirring.
Add milk powder,almond powder and sugar in a bowl and mix well.
Now slowly add it to the boiled milk with continuous stirring.
Now in a bowl mix corn flour and water.Add that to the boiling mixture and stir well.
Boil for some time till the mixture thickens a bit.
Take the mixture off the stove and add chopped nuts, crushed saffron and cardamon powder to it.
Mix well and let it cool.
Now pour them in kulfi moulds and deep freeze for 6-8 hours or over night.
Remove the kulfi off moulds and serve them with your desired chopped nuts.

Red Grapes Smoothie

A bowl of Grapes, ideal for weight loss rather than munching fried high calorie snacks in the evening, isn't it ?In my refrigerator's fruit section I found many fruits and yesterday thought let it be a light low fat fruity dinner for me and family.
So planned to prepare Red grapes smoothie and honey glazed apple ring pancakes.Click here for the honey glazed apple ring pancakes recipe
Red grapes are rich in vitamins, especially vitamin C and B, copper, anthocyanins, manganese and potassium. It is also low in calories and high in dietary fiber.
Most nutritionists and health experts would recommend consuming more of red grapes. The reason for this would be the high content of antioxidant resveratrol in red grapes, as compared to green ones.
Red grapes contain anthocyanins, a polyphenol. It is the presence of anthocyanins, which gives red grapes its characteristic color. Anthocyanins are absent in green grapes.
Now are these features not enough for me to get motivated to prepare something out of Red Grapes.
Yes, definitely, so here comes the very recipe for another relishing smoothie, Red grape smoothie.
 
Ingredients:
Red grapes-1 1/2 cup
Yogurt-1 cup
Milk-1/2 cup
Honey- 3-4 tsp, but original recipe calls for sugar-2-3 tsp
Ice cubes-optional
 
Recipe:
Blend all the ingredients together in a blender except ice cubes
Serve with 1-2 ice cubes if preferred chilled.
The cold weather here didn't let me further chill it with ice cubes.

Lemon Granité

Granité/Granita (in Italian also granita siciliana) is a semi-frozen dessert made from sugar, water and various flavorings. Originally from Sicily, although available all over Italy (but granita in Sicily is somewhat different from the rest of Italy), it is related to sorbet and italian ice.
They are available in smoother as well as coarser variety.
the smoother types are produced in a gelato machine, while the coarser varieties are frozen with only occasional agitation, then scraped or shaved to produce separated crystals. Although its texture varies from coarse to smooth, it is always different from the one of an ice cream which is creamier, and from the one of a sorbet, which is more compact; this makes granita distinct and unique.
It is best for beating the Heat of Summer.
I had many lemon left in my kitchen cupboard.
If pickled they will yield only very few. So thought of trying something new out of it.
Just with very minimum ingredients here comes a cool dessert for all.

Ingredients:
Lemon juice-1/2 cup
Water-1/2 cup
Sugar- little less than 3/4 cup
Zest of lemon- few to garnish

Recipe:
In a deep bottom pan boil water.
Take it off and add sugar. Mix well and now let it cool to room temperature.
Having cooled add lemon juice to it and mix well.
Now transfer it into a plastic container in which can be freezed.
Place in freezer for 30-40 mins. Take it out and using a fork poke in through out nicely.
Again freeze another 30 mins and do the same process.Repeat till 4 hours.
Now take out a scoop from it into a serving cup, garnish with zest of lemon and the final result is as follows

Mango Lassi/Mango Smoothie

A cool drink that tingles your taste bud and gives you a sort of relaxation is always welcome :)
Simple yet tasty smoothie.. Here comes the recipe...




Mango Lassi

Ingredients
2 cups ripe mangoes, peeled and chopped 
1 cup yogurt
1/2 cup milk
1/8 teaspoon cardamom powder (elachi)
3 tablespoons sugar, adjust to taste
Few mint leaves to garnish (Optional)
3 cups crushed ice or ice cubes or even cold water, use as needed

Recipe

Using a blender puree the mangoes
Now add yogurt,milk,sugar,elachi and whip in blender
Now add ice or water and whip again till lassi consistency is reached.
Garnish with mint leaves and enjoy.
