Dabeli/Kutchi Dabeli/Kachchhi Dabeli

A savoury snack from the region of Kutch in India is Kutchi Dabeli/Kutchi Burger. Kutch even today is well known for the authentic dabeli. Dabeli is nothing but burger bun which is cut partly into half and filled with a spicy potato mixture, along with dates and tamarind chutney, green spicy cilantro chutney, garlic chutney, roasted peanuts, pomegranate seeds and garnished with nylon sev. This ultimate combination of sweetness, sourness, spiciness gives you an eternal feeling. I digged in so badly that I didn't even bother getting my clicks right or perfect. I must tell this is a must try snack at home. The cooking time indeed is very less if all preparations like the chutneys, potato mixture and roasted peanuts, ready sev etc are done in advance. It is just a matter of few minutes. If you have any guests to be served in the evening you could very well keep ready all the required preparations in advance so that you could serve hot dabelis as and when required.


Ingredients:
Burger/Pav-4-5
Boiled and mashed potatoes-2 cups
Onion-1/2 chopped
Cumin seeds-1 tsp
Garam masala-1 tsp
Red chilly powder-1/2 tsp+1/4 tsp
Turmeric powder-1/2 tsp
Coriander leaves/cilantro-2 sprigs chopped
Dry mango powder/aamchur powder-1/4 tsp
Water-1/4 cup
Oil-2 tsp+1 tsp
Peanuts-handful
Pomegranate seeds-handful
Dates and Tamarind chutney/Meethi khajur aur imli ki chutney-1/2 cup(Dates and tamarind chutney preparation)
Cilantro spicy green chutney/Hari theeki chutney-1/2 cup(Cilantro spicy green chutney preparation)
Garlic chutney/Lasun ki chutney-1/2 cup(Garlic chutney preparation)
Nylon sev-for garnish
Butter-2'' cube
Salt to taste

Recipe:
  1. Prepare a mixture of water, garam masala, turmeric powder, 1/2 tsp red chilly powder, dry mango powder in a bowl.In a pan, add 2 tsp oil and when hot add cumin seeds, as they splatter add the prepared mixture to it and as they cook, add mashed potatoes and mix well. Let the spices get incorporated and then add salt to taste. Add cilantro and mix again.
  2. Dry roast peanuts and remove the skin when they cool down. Add 1 tsp oil and add the skinned peanuts to it, fry for some time and add salt and 1/4 tsp red chilly powder to it and give a mix.
  3. Cut one burger into half.
  4. Apply a tsp of date and tamarind chutney to it.
  5. Then spread a tsp of garlic chutney.
  6. Now add a tsp of cilantro green chutney on top of it.
  7. Add potato mixture on top of the chutneys.
  8. Further add whichever chutney you like more(I added dates and tamarind chutney) on top.
  9. Now add pomegranate seeds.
  10. Then top with roasted peanuts.
  11. Now add nylon sev on top.
  12. Dabeli filling is complete now.
  13. In a pan add butter and place the stuffed burger.
  14. Once golden on one side flip slowly and cook other side.
  15. Dabeli is ready to serve.Add little more chutney, raw onion, sev and enjoy. Similarly prepare rest and serve.
