Paneer Ladoo

Paneer ladoo is something all kids and even elders would love to have. Melt in mouth kind delicacy it is. My kiddo's kindergarten here had informed us that if there is any festival that we celebrate in India with pomp and fervor, it would be great if I could just pen down the importance of the festival and pass that to them so that they could let other kids know the importance of these festivals.
I too was excited to pen down few words about the festival and pass on some homemade paneer ladoos for all the kids. It is an easy delicacy which could be prepared within 30 mins if you have paneer (cottage cheese) ready. I prepared fresh cottage cheese at home and then prepared the ladoos.
Here goes the recipe.



Makes 35 ladoos

Ingredients:

Full fat milk-2 litres (I used 3.8% fat)
Lemon juice- made from 1 lemon +1 tbsp water
Sugar-5 tbsp.
Condensed milk-200ml(I used 7.5% fat)

For decoration:
Almonds-4-5 chopped
Cardamom powder-¼ tsp


Recipe:

  1. Boil 2 litres milk in a large pot
  2. Once it reaches the boiling stage add the lemon juice(I have added a tbsp of water to the lemon juice extracted from 1 lemon. You may need to vary the quantity based on the sourness of the lemon you use)
  3. Filter the curdled milk and transfer the curdled milk content to another pan
  4. Add condensed milk to it.
  5. Add sugar.
  6. Continue cooking on a low flame to avoid burning at the bottom.
  7. Once it forms lumps, and comes as a whole mass together, set aside from fire and let the mixture cool.
  8. Make roundels.
  9. Decorate with chopped almonds and cardamom powder








Notes:
  1. Do not use low fat milk to prepare paneer.
  2. You can reduce or increase the sugar depending on your taste.
  3. Store in refrigerator as it is a milk product, it does not have long shelf life (But would rarely remain to store)
