Pineapple Zarda Pulao

It was in my drafts and doing a PEEK A BOO! Well it got a chance today to come out as this month's challenge in SYS-W was to use a hidden ingredient Pineapple for me. I found this post would be doing justice to the assigned task and here I share the zarda pulao recipe with all. I adapted this recipe from Vahchef. A very simple but a delicious meal it makes.

Ingredients:
Cooked cooled rice-1 cup
Water-1 ½ cup
Sugar-1 cup
Ghee-3 tbsp.
Pineapple pieces-1 cup
Cardamom powder-¼ tsp.
Nutmeg powder-little less than ¼ tsp
Slivered Almond and Cashewnuts -handful
Saffron-½ g
Warm milk-¼ cup
Salt-just a pinch or two

Recipe:
  1. Heat a pan, add ghee.
  2. Add pineapple pieces and sauté it. Add little water, just 1  tbsp or so, cover and cook. Simultaneously, soak saffron in warm milk.
  3. After 4-5 minutes, add sugar and mix well.
  4. Once sugar melts and cooks, add cooked cooled rice.
  5. Now add saffron soaked milk. Add pinch of salt, cook for 5 minutes.
  6. Now add cardamom powder.
  7. Fry cashewnuts and almonds in ghee till golden.
  8. Mix them gently to the rice.Cook it in a slow flame for 3 minutes.
  9. Add nutmeg powder on top, serve hot and enjoy.
