Aubergine Masala/Baingan Masala/Eggplant masala

It had been long time since we had brinjal/aubergine/eggplant. So yesterday planned to prepare phulkas with aubergine masala. Very simple yet delicious aubergine masala recipe is here.

Aubergine/Eggplant/Brinjal- 1 diced.
Tomatoes-2 chopped
Onions -1 chopped fine
Green chillies-2 slit lengthwise
Fennel seeds-1 tsp
Jeera/Cumin seeds-1tsp
Ginger garlic paste-1 tsp
Garam masala-1 1/2tsp
Sabji masala-1 tsp
Turmeric powder-1/4 tsp
Coriander powder-1 tsp
Coriander leaves/Cilantro-2 sprigs
Salt to taste
Water as required for gravy
Oil-2 tbsp

In a pan add oil and when hot add fennel seeds,cumin seeds.
Now add ginger garlic paste and fry till rawness is almost gone.
Now add green chillies and onion and fry till onion is translucent.
Now add turmeric powder,coriander powder and give a mix.
Now add tomatoes and saute well.
Then add aubergine to it and mix well.
Now add 1/2 cup water to it and cook with lid covered.
Once done add garam masala, sabji masala, salt to taste and mix well.
Cook covering for few minutes. If you wish to have gravy do add little more water and cook else serve dry.Garnish with cilantro.
Hot and spicy Aubergine Masala is ready.
