Bell Pepper/Capsicum Stir Fry

A very simple side dish is bell pepper stir fry. Reason behind this try was I had few extra bell peppers stored in fridge and was very much essential to finish them off, and I searched in internet and well loads of options were available. I opted one and tweaked the recipe a little and came up with a new and very simple way. I and my family enjoyed this side dish alot. Good idea to use all the extra bell peppers loaded in fridge. Isn't it?

Ingredients:
Bell pepper/Capsicum- 2-3 diced
Green chillies-1 chopped
Besan/Gram flour-1 tbsp
Peanuts-fistful
Cashewnuts-5-6
Almonds-5-6
Cumin seeds-1 tsp
Fennel seeds-1/2 tsp
Haldi/turmeric powder-1/2 tsp
Coriander powder-1/2 tsp
Sabji masala-1 1/2tsp
Oil-2 tbsp
Salt to taste

Recipe:
In a pan add oil and when it is hot add cumin seeds, fennel seeds.
As they splatter, throw in green chillies and bell peppers.
Cook till they are little tender, then add turmeric powder and let it cook for 2 mins.
Now add besan/gram flour to it and mix well so that the bell peppers get lightly coated with it.
Now let it cook. Don't cover and cook in the entire process of sti frying as the bell peppers will turn mushy due to over cooking.Open pan cooking is preferred.
Now dry grind the peanuts,cashewnuts,almonds together and add the powder to the pan in which bell peppers are getting cooked.
Let the bell peppers get coated with the mixture added.
Cook for another 2-3 minutes after adding salt and sabji masala.
An ideal n easy side dish is ready to serve with phulkas or any Indian flat bread.
