Palak Rice/Spinach Rice

Last saturday my hubby got lots of fresh spinach. So I'm busy trying out different things out of it.
It needs to be finished off soon or else they will lose their freshness.
Yesterday night tried out a rice item. Making kids eat healthy food items is always a herculean task for mommies.
But to my surprise, my kid enjoyed this Spinach Rice very much.
We all enjoyed it indeed.
Recipe is as below
