Having few apples in my fruit bowl tempted me to try something different.And this time it turned out to be Apple ring pancake glazed with honey.

Ingredients:
Apple- 1
Whole wheat flour- 1 1/2 cups
Baking powder- 1 tsp
Cinnamon powder -1/2 tsp
Yogurt - 1/4 cup
Butter- 2-3 tbsp
Vanilla essence-1 tsp
Milk-1 1/4 cup or as required
Sugar-1-2 tbsp
Salt to taste
Honey glaze
For honey glaze:
Honey- 2 tbsp
Lemon Juice-1 tsp
Sugar- 1-2 tsp
Butter- 2 tsp
Recipe:
Core and slice apples into thin rings using Apple Corer/Slicer and set aside.
Combine remaining ingredients.
Heat lightly greased griddle over medium heat.
Place an apple ring on the griddle. Slowly pour small ladle batter over apple ring, starting in center. Use just enough batter to cover each ring.
Repeat with additional apple slices.
Cook until bubbles begin to appear. Turn, cook other side until lightly browned.
Serve pancakes with butter and maple flavored syrup or even by just honey glaze as I did.
For honey glaze,in a saute pan, melt butter over medium-low heat. Add sugar and cook, stirring, until sugar is dissolved. Remove from heat and add the lemon juice and honey to it. Mix and then coat the pan cakes with that mixture.
Enjoy the dish! n don't forget Eat and Eat little MORE.. :)

This is real mouth watering .. Sangeetha. I am of the view that we should use local and fresh fruits as far as possible..Here in Mangalore fresh apple is not available I am tempted to make an exception after seeing your blog... Can we replicate this with our own banana.?
ReplyDeleteDefinitely sadashiva anna, u can try with Bananas too. I would say go ahead.Innovations have no limits.I came across these apple ring pancakes in internet. To give a twist and better look, I did honey glaze and applied. It tasted better and look also enhanced.
