Sweet Corn Masala/Sweet Corn Palya

Had farm fresh sweet corn cobs in my pantry. Wanted badly a side dish to accompany my chapathis in the noon for lunch. Quickly decided to prepare a side dish in jiffy and guess what, I enjoyed it to the core. I had tried out the dish to finish off my corn cobs but now I'm going to get them again to prepare this and enjoy all over again. It is a very simple recipe and just cant stop myself from eating that. I rather ate it as such like a meal than like a side dish. This side dish is bit tangy due to use of tomatoes and lemon, spicy due to the added Indian spices like Sabji masala, green chillies and sweet due to the very nature of sweet corn. Here I share the recipe.


Ingredients:
Sweet Corn-1 cup
Tomato-1 big chopped
Green chillies-1-2 cut lengthwise
Onion-1 chopped fine
Lemon juice-2 tsp
Coriander powder-1 1/2 tsp
Turmeric powder-1/2 tsp
Sabji masala-1 tsp.
Ginger garlic paste-1/2 tsp.
Cumin seeds-1/2 tsp.
Fennel seeds-1/2 tsp
Oil-2 tbsp.
Cilantro/coriander leaves- 2-3 sprigs chopped
Water-2 1/2 cups
Salt to taste

Recipe:
  1. In a pan add oil, when hot add cumin seeds, fennel seeds and as they splatter add green chillies, ginger garlic paste and onions. Sauté till the onions turn translucent.
  2. Add in tomatoes and sauté, turmeric powder, coriander powder and mix well.
  3. Once tomatoes are almost cooked, add sweet corn at this stage. Mix well.
  4. Now add water and cook covered in medium flame.
  5. Once sweet corn is fully cooked, add sabji masala and then add chopped coriander leaves/cilantro, salt to taste and mix well. Cover and simmer for few minutes.
  6. Now add lemon juice, garnish with cilantro and enjoy with flatbreads or even rice.
