Vegetable Manchow Soup

A yet another popular Indo Chinese soup is Vegetable Manchow Soup. All love Chinese no doubt in that. This is a dark brown hot and spicy soup. Usually served with scallions and fried noodles. Apt for a rainy weather, don't you think? I wanted to spice up my mood in this cloudy dull weather here. So thought to prepare this yummy soup in the evening. A very easy to prepare soup it is. here I share the recipe.


Ingredients:
Quick cooking noodles-1 slab
Scallions/Green onions-3 sprigs
Garlic-3-4 pods chopped
Green chillies-1 chopped fine
Carrot-1 finely chopped
Cabbage-1/2 cup finely chopped
Black pepper powder-1/2 tsp.
Red chilly sauce-1 tsp
Dark soya sauce-2 tbsp.
Water-2 1/2 cups+ 3 tsp
Corn flour-1 tbsp.
Salt to taste
Oil-1 tbsp. for soup
Oil to deep fry the noodles.

Recipe:
  1. Cook noodles as per the instructions given in the noodles pack. Drain the cooked noodles and set aside.
  2. Deep fry them in oil till they are crisp.
  3. Remove excess oil by placing them on kitchen towel.
  4. In a pan add 1 tbsp. oil, when hot add spring onion, garlic, green chillies and sauté on high flame.
  5. Now add carrots and cabbage and sauté.
  6. Then add dark soya sauce, red chilly sauce to it and sauté.
  7. Then add 2 1/2 cups of water, salt and black pepper powder and mix well and bring it to boil.
  8. Now prepare a lump free mixture of corn flour with 3 tsp. of water and add it to the boiling soup with continuous stirring.
  9. Add more spring onion greens and transfer it to serving bowl. Serve by adding crushed fried noodles on top.
