Aloo Samosas

Hello there..
Who doesn't love samosas??
Potatoes have their own charm.. Aloo Samosas are usually favourites of almost all.
Come lets learn to prepare Aloo Samosas.. with rich spicy potato filling, waw.. r u drooling???


Samosa recipe:
Ingredients :
For Dough:

All purpose flour-1 cup
Salt to taste
Baking powder-pinch
oil-1tsp
Water

For Filling:
oil-2tsp
Cumin seeds
carrom seeds(Ajwain)
Onion-finely chopped
Turmeric powder/haldi powder
coriander powder
Dry Mango powder/Aamchur powder
Potatoes-Boiled,peeled and mashed
salt to taste
Chat masala

Recipe:

Dough:
Mix dry dough ingredients well,then add oil mix well.
Then add water as required and prepare a firm dough.let it rest for 1 hour.

Aloo Samosa filling:Heat 2 tsp oil in a kadai,add few cumin seeds,little carrom seeds,then add 1tbsp finely chopped onion,2tsp green chillies finely chopped,fry well then add haldi powder,coriander powder,aamchur powder and mix well. Now add boiled,peeled and mashed potatoes into it.mix well,add salt and chat masala to it.Now add coriander leaves(cilantro) finely chopped ones to it and mix well 

Divide into small balls. Roll oval shaped puri.Cut into halves. Make cone and fill the stuffing , seal the edges with help of water lining on the edges. Deep fry in slight warm oil once and then increase heat and fry.By this way you wont get any bubbles on samosa and also dough gets cooked well uniformly and becomes crispier too.

Note:
To make the backbone of samosa, after filling the cones,before folding,just twist the edge you are closing and then close. Also make sure you have filled in enough filling (generously).Then only you can get standing samosas!
