Amruthaphala/Coconut Milk Fudge

As the name goes, 'Amrutha' is a Sanskrit word meaning a divine nectar that makes living beings immortal and 'phala' as all know means fruit in Sanskrit. This is a famous dessert in our sub caste 'Havyakas', which is made out of coconut milk as a main ingredient. It definitely is a patience tester I must tell. It takes a whole lot of time to turn into a fudge, but this drool worthy sweet is worth the effort. Every burfi or fudge do calls usually for milk and sugar. Added to them is coconut milk which is a major ingredient in this dessert. Heavenly delicious, sinfully wicked dessert I can say with minimum ingredients! I can bet one can't stop eating one if he is a person with big sweet tooth! Here I share this delicious amruthaphala dessert or coconut milk fudge recipe.



Ingredients:
Makes-20 square pieces
Coconut milk(freshly extracted preferably, if not tinned coconut milk)- 500 ml or 3 cups
Milk-3 cups
Sugar-3 cups
Ghee -1/4 tsp. (to grease plate, spoon and knife to cut the fudge)

Recipe:
  1. In a big non stick pan add coconut milk.
  2. To that add milk.
  3. Bring it to a boil.
  4. Add sugar with continuous stirring and bring it to a boil again.
  5. Once done bring the flame to a low and keep stirring on a low to medium flame.
  6. As you go on, you will observe the milk mixture thickens and takes the form of condense milk.
  7. Further cook with stirring and you will observe the change in colour to a brownish thick liquid.
  8. After around 1 1/2 to 2 hours of cooking you would see that the mixture takes the form of a dough and leaves the pan freely at the bottom.
  9. Transfer it to a greased plate and pat well with a greased spoon.
  10. Cut into desired shapes when warm using a greased sharp knife and allow them to cool. Enjoy this delicious dessert.
