Spicy Tomato Lemon Rasam in 5 minutes

A delicious rasam is always welcome. A sumptuous lunch in a south Indian menu calls for rasam. They are made in variety of ways. My mom makes it in 3-4 ways. Here I share my way, aah mom's way I should say but little tweaked by me to give it a new taste. Here goes the recipe.


Ingredients:
Tomato-1
Lemon-1/2
Green chillies-2 slit lengthwise
Ginger -1'' crushed
Curry leaves-2 sprigs
Kasuri methi/Dry fenugreek leaves-1 tsp
Mustard seeds-1/2 tsp
Jeera/Cumin seeds-1/2 tsp
Hing/Asafoetida-1/4 tsp
Jaggery-1/2'' cube
Turmeric powder-1/4 tsp
Coriander powder-1 tsp
Water-3 cups
Oil-1 tsp
Salt to taste

Recipe:
In a deep bottom pan add oil, when hot add mustard seeds, jeera and as they splatter add hing.
Now add green chillies and sauté.
Now add 1 sprig curry leaves, kasuri methi and sauté.
Then add tomatoes and sauté followed by turmeric powder and coriander powder and cook for just 1 min without adding water.
Now add water, salt and jaggery.
Cook till rolling boil.
Remove off the flame and add lemon juice squeezed out of the lemon
Pop in 1 sprig fresh curry leaves.
Tangy, spicy tomato lemon 5 minutes rasam is ready to serve with hot plain rice or as such you can drink like soup.
