Aloo Gobhi is a very famous north Indian dish made with potatoes and cauliflower with added Indian spices.It is a very good side dish for flat breads as well as for rice.
Variations do exist in the way it is prepared based on the regional flavours, but here I tried to bring to you the most authentic Aloo Gobhi.
Ingredients:
Potatoes-2 medium,peeled,diced
Cauliflower-20-25 bite sized florets
Onion-1 medium chopped fine
Tomato-1 chopped fine
Cumin seeds/Jeera-1 tsp
Garam masala-2 tsp
Green chilly-1 slit lengthwise
Turmeric powder-1/2 tsp
Red chilly powder-1/2 tsp
Ginger garlic paste-1/2 tsp
Coriander powder-2 tsp
Black pepper powder-1/2 tsp
Coriander leaves-2 sprigs
Dried fenugreek leaves/Kasoori methi-2 tsp crushed in between your hands
Oil-2 tbsp
Salt to taste

Recipe:
- Separately parboil diced potatoes and cauliflower in water with salt to taste.Drain the water.
- In a pan,add oil and when hot add jeera.
- As they splatter add onions,ginger garlic paste,green chilly and saute till rawness of the ginger garlic paste goes away.
- Now add tomatoes and cook till they get mushy.
- Now add coriander powder,turmeric powder and cook well.
- Now add parboiled potatoes and mix well.Cook for a while.
- Then add cauliflower to it and mix so that all spices get coated uniformly.
- Now cover and cook for another 4-5 minutes.
- Now add garam masala, black pepper powder, crushed kasoori mathi,and 1 sprig of coriander leaves,salt if required to it and mix well.Cook again covered for 3-4 minutes.
- Garnish with coriander leaves. Serve with phulka or any other flat bread or rice.
