Veggie Pizza on stove top

Who doesn't love Pizza? It is not considered to be healthy due to the use of all purpose flour in the making, but we could make it healthy by loading tonnes of veggies in them. Isn't it? Now when you have to do pizza in small quantity, heating up an oven doesn't make sense, right? And we end up buying from outside.
So I have a solution for that, Guess what!

It is stove top pizza. With tonnes of veggies loaded it definitely turns out to be a healthy pizza.
My kid loved it so much that she was asking for more and more. It tastes same as you get from outside.
Since it is stove top we end up getting little parched at the bottom due to the direct heat from below, but honestly speaking we love little parched ones too right?

Ingredients:
For pizza crust:
All purpose flour- 1 1/4 cup
Oil-1 tbsp(Best to use olive oil if you have else normal vegetable oil would work)
Oregano-1/2 tsp
Garlic powder-1/2 tsp
Yeast-1/2 tsp
Sugar-1tsp
Luke warm water-1/2 cup
Salt to taste (Around1/4-1/2 tsp)

For pizza topping
Assorted veggies (bell peppers,parboiled beans,parboiled red kidney beans,corn,onions,shallots these are the veggies I chose, you could add or skip any)
Grated mozarella cheese( I used grated pizza cheese which I get here)
Oregano-1/4 tsp
White pepper powder-less than 1/4 tsp
Salt to taste

For pizza sauce
Onions-1 tbsp chopped
Garlic-3 pods chopped fine
Oregano-1/4 tsp
Tomato puree-2-3 tbsp
Tomato ketchup- 1 tbsp
Oil-1 tsp
Salt to taste

Recipe:
  1. In a bowl take luke warm water and add sugar,salt and yeast to it.Dissolve and let it sit for 10 minutes.After 10 minutes it will become frothy and this solution is used to knead the dough.
  2. Add all pupose flour to a bowl and to it add garlic powder.
  3. Then add to it oregano and mix well.
  4. Now add the yeast solution little by little and knead the dough.Knead very well and add oil and again knead till you get a soft dough.Let it rest on the counter for a while say 30 minutes.
  5. Next is sauce preparation and for this you need to add oil in a pan,when hot add onions,garlic and saute well.
  6. To this add tomato puree and mix well.Let it cook for a while and then salt to taste.
  7. Add tomato ketchup and cook for few minutes.
  8. Add oregano and mix well.
  9. Cool the mixture and churn in a mixer to fine paste.Your pizza sauce is ready.
  10. By now the dough would have doubled in size.Just punch it.
  11. Flatten it on a tawa smeared with 2 tsp oil.
  12. Let the dough get cooked for few miutes on a medium flame.As it cooks you see bubbles rising on the top.
  13. Just prick it with fork and then flip it over.
  14. Apply the pizza sauce on top and spread it well.
  15. Add your favourite veggie toppings.
  16. Add cheese on top and sprinkle salt, oregano and white pepper powder.
  17. Cover partially and cook on medium flame till cheese melts.
  18. Once it melts your pizza is ready to be transferred from tawa to a plate.
  19. Cut into desired shapes and enjoy delicious home made pizza.





Note:
Do not cook on high flame, your pizza bottom crust would get burnt.
Do not cover fully and cook as by doing that the steam will turn into water dropplets and fall off again on the pizza if there is no way to escape
