Kalakand/Milk Cake

Kalakand is a very special and authentic dessert in Northern part of India. Usually prepared during festivals, this is an ultimate mouth melting sweet with cottage cheese/paneer as its main ingredient.
Little more on calorie side it is,due to use of paneer/cottage cheese, sugar,ghee and condensed milk
yet once in a while digging into such wonderful desserts is a pleasure for me. I believe so is yours. ;) Here I share with you the authentic Kalakand recipe.


Makes 10 pieces.

Ingredients:
Soft Paneer(How to make paneer)-1 cup
Condensed milk-1  1/4 cup
Sugar-1 cup(Adjust to your taste, I have a big sweet tooth,so quantity of sugar is on higher end)
Melted Ghee-2 tbsp
Cardamom powder/Crushed cardamom-a pinch

Recipe:
  1. Take soft paneer and just crumble it,do not knead the paneer as you need that same texture to get perfect kalakand.In a wide mouth non stick pan, add 1 tbsp ghee and add paneer to it and saute till they get cooked a little in ghee.
  2. Now add condensed milk and cook with continuous stirring for a while.
  3. At one stage the mixture begins to thicken, at that time add sugar and mix well.
  4. Now after stirring for a while, when the mixture again begins to thicken add cardamom powder to it and mix well.
  5. At regular intervals of stirring add 1 tbsp ghee little by little and mix well.
  6. Now keep stirring till you get the entire mixture together like a dough.
  7. Transfer it to a greased plate and pat it with a spatula or palms, take care as not to burn hands because the mixture will be too hot.
  8. Pat well and let it cool down a little.
  9. Cut it into desired shapes and enjoy this delicious dessert.
