Badam Barfi/Almond Fudge

A simple yet delicious barfi is badam barfi or almond fudge. Little work is related to deskinning the blanched almonds. But that is all worth because the end product is just wonderful.Worth my effort I felt after I was done with the making of burfi

Here I give you the detailed recipe

Ingredients:
Almonds-1 cup
Sugar-1 cup
Milk-1/4 cup
Ghee-1 tbsp
Slivered almonds-few to garnish

Recipe:
  1. Soak the almonds in hot water for 1-2 hours (blanching of almonds).
  2. After 2 hours one by one deskin the almonds and keep aside. Phew I did it by taking 15-20 minutes. It is easy to peel off the skin of the blanched almonds.
  3. Grind together the deskinned almonds with sugar and milk into a paste as below, neither too fine nor too coarse.
  4. In a pan add ghee,let it melt.
  5. To that add the ground mixture and keep mixing to avoid any burning of burfi mixture.
  6. Keep mixing till the entire mixture turns into a dough and comes together.
  7. Transfer it to a greased plate and pat well with greased palm. Take care of your hands, not to burn them.Add some slivered almonds on top and pat them along so that they don't fall off the barfi.Let it cool completely then cut into desired shapes and enjoy this yummy fudge.
