Cream of Tomato

There isn't anything which is more filling and comforting than a cream of tomato soup.
I and my family substitute our Lunch too with a bowl full of tomato soup.
I tried this ample number of times and found this the best way to make.There may be many ways but I was inspired by the recipe by Sanjeev Kapoor. He explains the best and easy way to make Tomato Soup.
I followed his recipe and it yields the best soup. Recipe is as follows

Ingredients:
Red Ripe Tomatoes- 3-4 diced
Onion-1 small,sliced thin
Garlic-2-3 pods cut into small pieces
Bay Leaves-1
Corn flour-2 tsp
Water/Vegetable stock- 3 cups or as required
Black pepper powder-1 tsp
Salt to taste
Whipping cream-1/4 cup to garnish
Croutons-few
Oil- 1tbsp

Recipe:
In a deep bottom pan add oil and when hot add bay leaves,garlic,onions and saute till onions are translucent.
Now add tomatoes and half tsp black pepper powder and mix well. Add 1 cup water/vegetable stock and let it cook properly.
Once cooked let it cool completely before blending it.
Having cooled remove the bay leaves off and add remaining contents to the blender and blend well.
Once done, transfer it to a deep bottom pan and cook again for few minutes.
Now to make it a smooth soup just filter it using a drainer and then again cook for another few minutes after adding remaining vegetable stock/water.
Add salt to taste and black pepper powder.
Mix well and boil for another 2 mins.
Now in a small bowl mix corn flour with 2-3 tsp of water and add it to the mixture and keep stirring.
Take it off the heat and add whipping cream and few croutons and serve hot.
Croutons can be easily prepared by just cutting the sandwich bread to small pieces and roasting them on a flat pan or in microwave just by drizzling few drops of oil. It can be roasted without oil too.
