Sambar made with ground coconut goes very well with boiled rice,white rice,dosas etc. A south Indian lunch is incomplete without a sambar in the menu. Here I share with you all a simple sambar recipe,easy to prepare and relish as side dish for rice or as an accompaniment for dosa.
Ingredients:
Potatoes-2 medium peeled and diced into cubes
Onion-1 chopped thin lengthwise
Tomato-1 cut lengthwise
Carrot-2 diced into cubes
Green chilly-1 slit lengthwise
Fresh Coconut scrapes-1 cup
Jaggery-1'' cube
Turmeric powder-1/4 tsp
Dry red chillies/Byadagi chilly-2
Methi/Fenugreek seeds-1 tsp
Cumin seeds-1/2 tsp
Coriander seeds-2 tsp
Mustard seeds-1/2 tsp
Tamarind paste-1/2 tsp
Sambar powder-1 tsp (Any brand would do, I use MDH Sambar powder)
Oil-3 tsp
Curry leaves-1 sprig
Water as required
Salt to taste

Recipe:
- In a deep bottom pan add potatoes,carrots,green chilly,onion,tomato,jaggery,turmeric powder,salt to taste and add enough water to submerge the vegetables and cook covering till the vegetables get cooked.
- In a pan heat 2 tsp oil and when hot add cumin seeds,coriander seeds,dry red chilly,fenugreek seeds and saute till they get roasted.
- Once done transfer them to a blender. Add coconut scrapes, tamarind paste,sambar powder and grind them with required amount of water till you get a smooth paste out of it.
- Once done transfer the prepared paste to the deep bottom pan in which the vegetables were getting cooked.
- Mix well and add curry leaves and cook for a while say 10 minutes till you see the sambar boiling, now check for salt. If required add salt and cook for another 2-3 minutes.
- Now in a small pan add 1 tsp oil and prepare seasoning. For seasoning add mustard seeds,1 cut dry red chilly and as the mustard seeds splatter. transfer it to the boiling sambar.
- South Indian coconut sambar is ready to serve.
